Chorizo and butter bean surprise

Serves 2
Ingredients
1 chorizo, sliced
1 leek, sliced
2 - 4 eggs (optional)
Mushrooms - 1 punnet, sliced
1 tin butter beans
100-200ml white wine
150ml Cream or soured cream
Method
- Fry chorizo till browned
- Remove from pan, retaining oil in pan
- Fry leeks until browning
- Set leeks aside with chorizo
- Fry mushrooms till well cooked
- Add wine and reduce till nearly all gone
- Add chorizo and leeks
- Add drained butter beans
- Heat all through
- Add cream
- Simmer to reduce liquid then serve.
Can be served with rice or pitta if more servings required
